White or blue potato? A blue one is better!

Are Purple or Blue potatoes are more nutritious than white potatoes?

 

In a way, yes.

 

This is because darker color potatoes (and most other veggies for that matter) contain anthocyanins, which are great anti-oxidants in the flavonoid category.

 

Anthocyanins have great anti-inflammatory properties also.

This helps greatly with cardiovascular health in addition to keeping your cells stable.

 

Purple potatoes are great in all types of dishes, and also when just baked.

 

This potato falls into the “eat the rainbow” foods, and, as you add more and more of fresh, organic, colorful fruits and vegetables to your diet, you strengthen and nourish your body.
